Cornbread Waffles

These waffles are crispy and crumbly, just like a fresh piece of cornbread, but you can actually spread butter and jam on them! The marionberry jam is courtesy of @emeraldh1ppie who is a co-worker of mine. It’s perfectly sweet and really pairs well with this semi-savoury waffle. Though the audio didn’t turn out so well in the first part of this video, it was a lesson learned, i.e. prepare better.

Recipe:

-1 box Jiffy Cornbread mix
-1 cup AP Flour
-1/4 tsp Baking Powder
-1/3 cup vegetable or canola oil
-3/4 cup milk1 egg
splash of vanilla. You can also add nutmeg and/or cinnamon!

Mix well and put on a greased medium heat waffle iron for about 3-4 minutes or until golden. Use a spatula and fork to remove. Top with your faves and enjoy!
